Nutritional Value of Eggplant

According to the study of the Institute of Biology of Sao Paulo State University, Eggplant is effective treatment in high cholesterol. But some studies found no effects at all. It helps block the formation of free radicals and a source of folic acid and potassium.

The nutritional value of eggplant per 100g are; carbohydrates – 5.7g, sugar – 2.35g, dietary fiber – 3.4g, fat – 0.19g, and protein – 1.01g. Eggplant is a plant of the family Solanaceae which known as the nightshades, native to Nepal, India, Bangladesh, Pakistan and Sri Lanka.

In cooking, eggplant can be battered before deep-frying and served with a sauce made of tamarind. Also, it can be sliced and deep-fried then served it with plain yoghurt.



Eggplant is rich in nicotine; the amount of nicotine is negligible compared to passive smoking. About 20 pounds or 9kg of eggplants contains the same account of nicotine as a cigarette.

Eggplant is also cultivated in southern and eastern Asia.
